Mussels Marinara

Mussels in a spicy tomato sauce.

  • 2 lbs mussels (cleaned and debearded)
  • 1 14 oz can chopped tomatoes
  • 8 garlic cloves sliced
  • 1 teaspoon red pepper flakes
  • 1/4 cup olive oil
  • shredded fresh basil
  • 1 teaspoon oregano


Serves 2 In a large skillet, heat olive oil, garlic and red pepper flakes over medium heat. Saute approx 3 to 5 minutes being careful not to brown the garlic. Add tomatoes and oregano and simmer for 10 to 15 minutes. Add mussels and cover. Cook approx 3 to 5 minutes until mussels open. Add basil and serve.

Serve with crusty bread. Or for a main course, serve over linguine.
