Honey's Pesto Munchies

These are super simple but sophisticated looking. Can be prepped ahead and baked as guests arrive.

  • 5 oz Basil
  • 1 Cup Olive Oil
  • 10 Cloves Garlic (minced)
  • 1 Cup Pinenuts
  • 1 1/2 Cup Parmesan Cheese (grated)
  • 30 Mini Phyllo Shells (found in frozen section of grocery store)
  • 1 Cup Mozzarella Cheese (shredded)


Place basil, pinenuts, garlic, olive oil and 1 cup of parmesan cheese in a food processor or blender. Process until smooth. Add the remaining parmesan cheese and shredded mozzarella. Pulse until well incorporated. Preheat oven to 350. Place phyllo shells on cookie sheet. Spoon or pipe pesto and cheese mix into phyllo shells until full. Bake in oven for 10-12 minutes. Serve hot.
